Italian Easter pie

Ingredients

  • 4 (9 inch) unbaked pie crusts 
  • 2 pounds ricotta cheese 
  • 6 eggs 
  • 8 ounces mozzarella cheese, grated 
  • 1 pound cooked ham, chopped 
  • ½ pound Genoa salami, chopped
  • ¼ pound prosciutto, chopped
  • ¼ cup grated Parmesan cheese 



Directions

  1. Preheat oven to 325 degrees F (165 degrees C).   
  2. Place ricotta in a large mixing bowl and add eggs one at a time while mixing on low speed. Stir in mozzarella, ham, salami, and prosciutto until all ingredients are well combined. Line two 9 inch pans with pastry. Spoon half of mixture into each pan. Sprinkle half of the Parmesan cheese over each pie, then cover with top pastry. Crimp edges and cut steam vents in tops.  
  3. Bake in preheated oven for 1 hour, until crust is golden brown. Cool on racks.

Shepherds pie

Ingredients

Prep Time: 15 minutes    Cook Time: 30 minutes   Total Time: 45 minutes 


  • 1 pound cooked ground beef can use more if you like     
  • 1 tablespoon dry Italian seasoning    
  • 2-3 cups leftover mashed potatoes 
  • 1 bag bag frozen vegetable mix    
  • 1 1/2 cups shredded mild cheddar cheese    
  • 1/2 cup sour cream     
  • 1 bag bag frozen vegetable mix 12 ounces and small carrots    
  • 1 can French onion soup 10 ounces    
  • 1 packet beef gravy mix .87 ounces 


INSTRUCTIONS    


Preheat oven to 350F


In a large saucepot, place the frozen vegetables. Cover with water and place over medium-high heat until they just come to a boil. Drain veggies and set aside. 


In the same saucepot, combine the French onion soup, dry gravy mix, and Italian seasoning. Stir well and place over medium-high heat, stirring often, until just heated through. Remove from the heat and stir in the cooked ground beef and drained vegetables.


In a large bowl, combine the mashed potatoes, sour cream, and 1 cup of cheese. Stir well to combine.


Pour the ground beef filling into the bottom of an 8x8 baking dish. Top with mashed potatoes and spread to cover. Top with remaining cheddar cheese. 


Bake, uncovered, at 350 for 30 minutes.

BETTER THAN NEW YORK HOME MADE PIZZA

pizza - 40 minutes

Dough -


  • 2 Cups of all purpose flour
  • 3/4 Cup of warm water
  • 1 packet of quick rise yeast
  • Table spoon sugar
  • Dash salt
  • 2 Table spoons of vegetable oil


Pizza Ingredients -


  • Marina Sauce - I use Victoria's 
  • 2 Cups mozzarella cheese 
  • Garlic powder
  • Onion Powder


Dough Instructions - 


Pre-heat your oven to 500 degrees Fahrenheit. 


Take your 2 cups of flour and add it to a large mixing bowl. Fill up a small mixing bowl with your warm water and sprinkle your yeast on top. After, sprinkle the sugar on top of the yeast. This will activate your yeast and you will see it start to bubble and foam after about 1-2 minutes. 


Add your yeast mixture to your flour and mix with an electric mixer or by hand. Add a dash of salt and your 2 table spoons of oil.


Remove your dough from the mixing bowl and start kneading by hand for about five minutes. 

Place the dough back into the bowl and cover with a towel. Place that bowl on top of the stove so the warmth of the oven will make it rise faster. This will take only about 10 minutes.


Spray your pizza baking dish. Remove the pizza dough from the bowl and knead by hand for five minutes.  After, form the pizza crust on the baking dish with your dough. Add marina sauce, cheese, onion and garlic powder. 


Bake for about 12-15 minutes. 


Prepare to be blown away! :)

Pastelon – Latin Lasagna

recipe - 1 1/2 hours

Ingredients:


  • Ground beef – 2lbs
  • Sazon – 1 packet
  • Sofrito – 1/4 of a cup
  • White onion – 1 onion
  • Red pepper – 1 red pepper
  • Garlic – 1 garlic bulb
  • salt – teaspoon
  • pepper – teaspoon
  • cilantro – 1/4 of a cup
  • Mozzarella Cheese- 1 cup
  • Goya unpitted olives – 1/3 of a cup
  • Sweet yellow plantains – 9 bananas
  • Olive oil or vegetable oil


Instructions:


  • Preheat the oven to 350 degrees Fahrenheit
  • Peel the sweet plantain and slice each one into 3’s.
  • Then place them into a pan with olive oil or vegetable oil and cook each side until a nice light brown color and place them into a large bowl.
  • Once you finish frying all of the bananas and FOOD RECIPE place them into a bowl let them cool off and start the ground beef portion of the meal.
  • In a large frying pan, fry onion, red pepper and garlic.
  • After about 5 minutes add the ground beef.
  • After you add the ground beef add a packet of sazon and your sofrito.
  • Once you see the ground beef looks cooked add some salt and pepper to your taste.
  • Once the ground beef is to your liking add the olives and cilantro.


Layering Your Dish:


  • Take a 9 x 11 baking pan and spray it with cooking spray
  • Take your sweet plantains that are in the large bowl and mash them together.
  • After you do the step above, take 1/3 of that bowl and layer it on the bottom and add the meat on top.
  • Once you do that add the cheese and repeat the steps above.
  • You should finish with the cheese being on top of the meat.
  • Cover your dish with aluminum foil and bake for 30 – 45 minutes.


Finally you can enjoy with a nice bottle of Malta!
